Alex’s Grilled Pizza with White Sauce

I made these with my wife and we had an absolute blast. Don’t be strict with the recipe; it’s all about winging it. Double it up, try different sauces, leave off the meat—whatever. Pair with chilled white wine or fresh lemonade.

Heat sweet potato in microwave until tender. Chop sweet potato into ½" cubes; chop all remaining ingredients as desired.

Prepare grill for medium heat cooking. Grill the sausage until charred and cooked through. Remove from heat, slice, and set aside.

Hand-stretch or roll the pizza dough ball out to a rough circle; liberally coat one side with olive oil. (Thinner dough means crispier pies. If you like, divide ball for two separate pizzas.)

Add the dough circle to the grill and cook until air bubbles form and crust is browned, usually 3-5 minutes.

Pour several tablespoons of oil onto a plate or baking sheet and spread oil evenly over the surface. Remove the crust from grill and transfer the crust, uncooked side down, onto the oiled plate or baking sheet.

Top the grilled side of the crust with desired amount of olive oil and garlic (this is the white sauce); add all remaining ingredients.

Slide or lift the pizza back onto the grill, uncooked side down, close the grill cover and cook until cheese is melted and the bottom crust is browned, usually around 5-7 minutes. Slide or lift the pizza onto a clean plate/baking sheet. Slice and serve.
