1 bunch of asparagus, trimmed and steamed until cooked, but still crunchy
1 cup of cream
Juice of half a lemon
A few slices of diced ham (or use smoked salmon, if you prefer!)
A splash of sea salt
A splash of black pepper
One pat of butter
A sprinkling of grated cheese like manchego (if desired)
Preheat oven to 350°F.
Combine the egg, cream, lemon, and ham in a mixing bowl and whisk together. Add salt and pepper.
In a large saute pan, melt the butter and pour in the egg mixture.
Add asparagus to the pan, letting them sink in a bit. Sprinkle with cheese.
Cook for about a minute over medium heat.
Transfer the pan to the oven for about 20-30 minutes, or until done.
If you'd like the cheese on top to brown a bit more, turn on the broiler for the last minute or two of cooking, keeping a close eye on the process.
